Organic Green Banana Flour Cookies

Our Organic Green Banana Flour is gluten-free and all natural made from dried green bananas. It performs good as a wheat flour replacement but can also act as a thickening agent. Try Green Organic Banana Flour in batters or add directly to smoothies.

INGREDIENTS

makes 25-30 cookies

  • 3/4 Cup Organic Green Banana Flour, plus 2 tablespoons
  • 1/2 Teaspoon Baking Soda
  • 1/4 Teaspoon Kosher Salt
  • 1 Stick Of Butter
  • 1/4 Cup Brown Sugar
  • 1/2 Cup Granulated Sugar
  • 1 Large Egg, plus 1 yolk
  • 1/2 Teaspoon Vanilla Extract
  • 1/2 Cup Semi-Sweet Chocolate Chips
  • 1/2 Cup Crushed, Toasted Walnuts

 

DIRECTIONS

  1. Preheat oven to 350 degrees F.
  2. In a small bowl whisk together banana flour and baking soda.
  3. Using a hand mixer or stand mixer with a paddle attachment, cream butter and sugars together until fluffy. Add egg and mix until completely incorporated. Add vanilla, chocolate chips, walnuts and mix until just combined.
  4. Using a tablespoon or 1/2-ounce mini ice cream scoop, place 12 to 13 cookies on a cookie sheet, spaced about 2 inches apart. Bake for 7 to 8 minutes. Cool on a wire rack. Repeat with remaining cookie doe.
