Ermite is Quebec’s first blue cheese. Its cream colouring has blue veins marbled throughout. It is semi-soft with a crumbly texture that becomes creamy over time. It has a sharp, salty taste that lingers in the mouth. Notes of nuts and fruit pit accompany ermites flavour.
