A Firm and creamy english cheddar that is matured 200 feet underground in the Wookey Hole Caves in the Mendip Hills. The constant temperature and humidity of the cave enables it to age to age and take on the distinctive earthy and nutty flavours from the atmoshere. It is made entirely by hand from the salting of the curds to the bandaging of the cheese cloth.
Pair this robust, sweet and nutty cheddar with a full bodied red such as a Cabernet Sauvignon from South Africa or a classic Claret from Bourdeaux in France.
