Clos St-Ambroise is a blend of two fabulous products, cheese and St-Ambroise beer, a combination that highlights the fruity aromas of the cheese. The rind is washed with St-Ambroise beer, and the interior becomes pale yellow with a soft and slightly supple texture. The nutty aroma and fruity flavour are reminiscent of the St-Ambroise beer. Ermite is Quebec's first blue cheese. Its cream colouring has blue veins marbled throughout. It is semi-soft with a crumbly texture that becomes creamy over time. It has a sharp, salty taste that lingers in the mouth. Notes of nuts and fruit pit accompany ermites flavour.
